Easter Cupcakes

Happy Easter! I hope everyone is eating lots of Easter eggs and cake this week!

Is this possibly the cutest cupcake ever?

You will need:
110g/4oz butter or margarine, softened at room temperature
110g/4oz caster sugar 
110g/4oz self-raising flour 
2 eggs (from happy chickens of course)
1 tsp vanilla extract 

For the icing:
200g/7oz butter, softened
280g/10oz icing sugar 
Food colouring (I recommend the concentrated paste colours - the tip of a cocktail stick is enough)
Piping bag & tip
Easter decorations

Makes 12

Cream the butter and sugar. Beat in the eggs, flour and vanilla extract. Spoon into cupcake cases and bake at 180C for 12 minutes or until a knife comes out clean. Leave to cool completely before icing. For the icing, mix together the softened butter and add the icing sugar slowly. Spoon into the piping bag and follow my instructions for piped icing here

Carrot and Mango Cake

This cake has no fat and contains carrot, mango and sultanas so.....it's basically good for you! It's extremely dense, a lot like a pudding and very tasty.

You will need:
225g (8oz) plain flour
3 teaspoons baking powder
175g soft dark brown sugar
1 teaspoon ground ginger
1 teaspoon ground corriander
1 teaspoon mixed spice
115g (4oz) sultanas
115g (4oz) finely chopped mango
450g (1lb) grated carrot
1 egg
250ml milk

Cream cheese frosting (ok, this part has fat!)
115g (4oz) cream cheese (low fat optional)
115g (4oz) icing sugar
Zest of one orange

Put all the dry ingredients in a bowl and mix well. Beat the egg in the milk and mix this with the dry ingredients. Place in either in one large round cake tin or two victoria sponge tins. Cook at 180C / 350 F for around an hour (I cooked this in two halves, a single cake may take longer) or until a knife comes out clean.

When cool, mix the cream cheese, icing sugar and half of the orange zest. Spread this on the cake and finish with the remaining zest.

Homemade Wedding Presents: Word Art

I discovered a great website for making "word clouds". You can choose the words yourself or you link it to a website or twitter id etc. You pick the shape, colours and orientation of the words...believe me, you can spend a long time on there!

I used this website to create a piece of art for some friends who are getting married this month. I used a box frame from Ikea and printed the picture from Tagxedo (you can dowload a jpg file which I then cropped in Picasa). I love how it turned out, I hope the happy couple like it!
