If you are on a health kick in January (like me) these muffins are great as you can still get your baking fix but not feel too guilty about it. They don't contain a lot of fat or sugar, so they are definitely better than a regular cupcake. I recommend them with a cup of tea for breakfast.
You will need:
125g melted butter
500g self-raising flour
2 tsp baking powder
Pinch of salt3 tsp allspice
130 caster sugar
2 tsp vanilla extract
4 large, ripe bananas
Large squeeze of golden syrup
Handful of chopped walnuts, sunflower seeds or desiccated coconut (optional)

Heat the oven to 180C. Melt the butter and leave it to cool while you mash the bananas. In a large bowl, mix the flour, baking powder, salt and spice, then add the caster sugar and stir through.
Beat together the eggs, vanilla extract, butter and milk in a second bowl. Add the mashed banana and stir well.
Make a well in the centre of the dry ingredients and add the egg mixture, stirring roughly with a fork until it is a lumpy paste. Don't mix any more than you need to. Add the nuts or coconut if required.
Spoon the mixture into paper cases or small squares of baking parchment. If you have made more than one flavour you may like to sprinkle some extra on the top so that you can tell which is which.
